Water Activity / Measurement Procedure
The water activity of products, particularly food products, indicates the amount of unbound water in a material. This quality factor, also called the aw value, depends on the water vapor pressure in the material, the current temperature, and the water vapor tension of the surroundings. The humimeter RH2 instrument allows for the quick and easy determination of water activity. Thanks to the large test quantity, even larger sample quantities can be measured in a short time. The simple operation ensures process cost savings and error-free water activity determination. Simply insert the material into the measurement chamber and close it. After an appropriate conditioning time, the water activity can be read directly on the meter's display. The time required to reach humidity equilibrium depends strongly on the material to be measured, as well as the temperature. For example, hygroscopic materials like cornflakes assimilate in a considerably shorter time than whole corn kernels. In this context, it is important that the sample has the same temperature as the measurement chamber – a large temperature difference prolongs the conditioning time. The material-dependent conditioning time is a physical phenomenon and cannot be artificially shortened.
Generally, the conditioning time varies from 5 minutes to about an hour.
Humidity equilibrium is reached when the displayed measurement value no longer changes for a period of a few minutes (e.g., 10 minutes, changes less than 0.002 aw).
